Custard Cookies

Process
Preheat the oven to 170° C.
Line and grease a baking tray with baking paper or parchment.
In a stand-mixer or with a balloon whisk, cream the butter and sugar until light & fluffy.
Add the egg and whisk until combined.
Sift in the dry ingredients, flour, corn flour, custard powder and baking powder and gently fold in until a soft dough comes together.
Scoop small amounts of cookie dough onto the baking tray and press the dough down slightly with a fork or with your fingers.
Bake for 12 minutes in the preheated oven until just baked through.
Cool on a wire rack and dust with icing sugar before serving.

- 125g soft butter, plus extra for greasing the baking tray
- 1/2 cup granulated sugar
- 1 whole egg
- 1/2 tsp vanilla
- 1/2 cup custard powder
- 1/2 cup corn flour
- 1 tsp baking powder
- 1 cup all-purpose flour
- 2 tbs icing sugar for dusting
