Chocolate cookies

These chocolate cookies are soft and buttery, much like the consistency of chocolate cake but in cookie form. I usually toss in chunks of whatever chocolate or sweets I have in the cupboard to use up last bits.
Ingredients
- 100 grams butter
- 50 grams dark chocolate
- 100 grams brown sugar
- 1 whole egg
- 1/2 tsp baking soda
- 1/2 tsp salt
- 225 grams flour
Equipment
- Mixing bowl
- Sieve
- Whisk
- Baking tray
Process
Step 1:
Preheat the oven to 170°C.
Step 2:
Melt the butter and chocolate together in a double-boiler and set aside to cool slightly.
Step 3:
Whisk in the sugar and once the sugar is well incorporated, add the egg and whisk again until you have a smooth but thick chocolate batter.
Step 4:
Sift in the flour, baking soda and salt.
Step 5:
Gently fold until a soft dough forms.
Step 6:
Wrap the dough in cling film and leave to rest for 20 minutes.
Step 7:
Divide the dough and roll into small balls, gently press down on a baking sheet with your palm.
Step 8:
Sprinkle over any nuts, sprinkles of bits of chocolate or just a little pinch of salt.
Step 9:
Bake for 10 minutes until just cooked through.
