Oliebollen

Oliebollen are a traditional Dutch treat, typically enjoyed around New Year’s Eve. They are essentially deep-fried sweet dumplings, sometimes containing fruit pieces, and are often dusted with powdered sugar.

Process

  1. Prepare the Batter:
    • In a large bowl, combine the flour, instant yeast, sugar, and salt.
    • In another bowl, mix the warm milk and eggs together. Add this to the dry ingredients.
    • Add the lemon zest and, if using, the raisins or chopped apples. Mix until a smooth batter forms.
    • Cover the bowl with a clean cloth and let it rise in a warm place for about an hour, or until the batter has doubled in size.
  2. Heat the Oil:
    • Fill a deep fryer or large pot with enough oil for deep frying. Heat the oil to 180°C (350°F).
  3. Fry the Oliebollen:
    • Once the oil is hot, carefully drop spoonfuls of the batter into the oil. Do not overcrowd the fryer.
    • Fry the oliebollen for about 3-5 minutes or until they turn golden brown, turning them halfway through the cooking time.
    • Use a slotted spoon to remove the oliebollen from the oil and drain them on paper towels.
  4. Serve:
    • Dust the oliebollen with powdered sugar while they are still warm.
    • Serve immediately for the best taste.
