Oliebollen

Oliebollen are a traditional Dutch treat, typically enjoyed around New Year’s Eve. They are essentially deep-fried sweet dumplings, sometimes containing fruit pieces, and are often dusted with powdered sugar.
Process
- Prepare the Batter:
- In a large bowl, combine the flour, instant yeast, sugar, and salt.
- In another bowl, mix the warm milk and eggs together. Add this to the dry ingredients.
- Add the lemon zest and, if using, the raisins or chopped apples. Mix until a smooth batter forms.
- Cover the bowl with a clean cloth and let it rise in a warm place for about an hour, or until the batter has doubled in size.
- Heat the Oil:
- Fill a deep fryer or large pot with enough oil for deep frying. Heat the oil to 180°C (350°F).
- Fry the Oliebollen:
- Once the oil is hot, carefully drop spoonfuls of the batter into the oil. Do not overcrowd the fryer.
- Fry the oliebollen for about 3-5 minutes or until they turn golden brown, turning them halfway through the cooking time.
- Use a slotted spoon to remove the oliebollen from the oil and drain them on paper towels.
- Serve:
- Dust the oliebollen with powdered sugar while they are still warm.
- Serve immediately for the best taste.
