Shortbread

What could be more perfect that a few bites of buttery homemade shortbread? The ideal accompaniment to a warm cup of tea or even a thoughtful gift to a friend or family.
Process
Step 1:
Preheat the oven to 180°C. Line and butter a square baking pan.
Step 2:
Combine the flour, castor sugar in a mixing bowl.
Step 4:
Toss in the cubes of butter and gently rub into the flour with your fingers until the mixture resembles sea sand.
Step 5:
Add the vanilla and mix in.
Step 6:
Press the shortbread into the baking pan gently and prick all over with a fork.
Step 7:
Bake in the preheated oven for 30 minutes until slightly golden brown.
Step 8:
Once baked, cut into rectangles and sprinkle over some extra castor sugar.

- 300 grams all-purpose flour, sifted
- 200 grams butter, cubed
- 100 grams castor sugar + extra for sprinkling over
- 1 tsp vanilla extract
