Orange Madeira Loaf

A moist Madeira loaf that is perfect as a layer in a trifle or just on it’s own for tea-time.
Process
Preheat the oven to 170°C.
Line and butter a loaf pan.
In a mixing bowl, whisk together the eggs and sugar until pale and fluffy. It should nearly double in size with the air whisked in.
Whisk in the soft butter until completely combined. Sift in the flour and salt, gently fold in until finally adding in the orange, rind and vanilla.
Pour into the loaf pan and bake for 30 minutes until the loaf is spongy and completely cooked.
Use as a layer in trifle or enjoy on it’s own with whipped fresh cream.

- 3 large eggs
- 1/2 cup sugar
- 100g soft butter
- 1 cup self-raising flour
- pinch of salt
- 1 tsp vanilla extract
- 1/4 cup orange juice
- 1/2 tsp orange rind
