Creamy Rice Pudding

A humble ingredient like rice can be turned into the most comforting bowls of creaminess when cooked in milk and butter.
Process
Soak the rice in water for 2-4 hours then rinse thoroughly and drain off any excess water.
Place the rice, coconut milk, cinnamon stick and salt in a saucepan and cook over low heat.
The rice will start to soften whilst absorbing the milk, when the rice is just about half cooked, add the condensed milk, butter, cardamom and saffron. Stir occasionally until completely cooked.
The pudding will thicken on standing.
Serve with a sprinkling of nuts, cinnamon sugar or fresh fruit.

- 1/2 cup white long grain rice or glutinous rice
- 1/2 a can of condensed milk
- 1 pinch salt
- 2 cups coconut milk
- 2 tbsp butter
- 2 cups water
- 1 cinnamon stick
- 1/2 tsp ground cardamom
- A pinch of saffron strands
- handful of chopped roasted almonds or pistachios (optional)
- cinnamon sugar (optional)
- chopped fresh fruit (optional)
