Tiramisu

While the classic version of Tiramisu uses eggs, this recipe is eggless but still rich and creamy. I use condensed milk to sweeten the cream and marscarpone filling.
Ingredients
250 ml whipping cream
1/2 can condensed milk
250 g mascarpone
24 savoiardi / lady finger biscuits
120 ml espresso / strong coffee
2 tsp sugar
1 tbs cocoa powder
Process
- Brew some coffee or make some espresso. Sweeten with some sugar and leave to cool.
- Whisk the cream until soft peaks and then fold in the mascarpone and condensed milk.
- Time for some layering – Dip the savoiardi or lady finger biscuits into the sweetened espresso and place into the serving dish, creating the first layer. Spoon over the creamy filling and smooth over.
- Repeat step 3, creating the second layer of dipped biscuits and creamy filling.
- Refrigerate for a few hours to set.
- Dust over some cocoa powder and decorate with a few mint leaves.
