Chocolate Fudge Cake

Ingredients for cake
- 125g dark chocolate
- 100g butter
- 1 cup sugar
- 1/4 cup canola oil
- 1 tsp vanilla
- 2 whole eggs
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1 cup all-purpose flour
- 1 cup hot water
Ingredients for chocolate ganache frosting
- 100g milk chocolate
- 100g butter
- 200g icing sugar
- 100ml fresh cream
Equipment
- Double boiler
- 2 x round baking pans
- Mixing bowls
- Balloon whisk
- Sieve
- Spatula
- Wire cooling rack
Process
In a double boiler, melt the chocolate and butter gently and once melted add the eggs, oil and vanilla and mix until the wet ingredients is completely combined.
Sift the dry ingredients, sugar, flour, cocoa powder, baking powder and salt into a mixing bowl.
Make a well in the centre of the dry ingredients and pour in the chocolatey wet ingredients. Add the boiling hot water and starting from the centre of the mixing bowl, whisk the batter until there are no lumps and the batter is smooth.
Pour into the prepared baking pans and bake for 45 minutes.
One baked, gently remove from the baking pans and allow to cool on a wire rack.

For the chocolate ganache frosting, in a double boiler, melt the chocolate and fresh cream and allow to cool.
Cream the butter and icing sugar and add in the cooled chocolate. Whip on high speed until light and fluffy.
Spread the frosting on the cooled cakes and lay the cakes on each other.
