Creamy Potato Gratin

My go-to comfort dish that’s creamy and cheesy. Add bacon and mushrooms to make it a main dish or serve with a Sunday roast.
Process
In a baking tray on a stove-top, fry the onions, thyme and rosemary in olive oil over a low-medium heat until caramelised.
Deglaze the tray with the stock and lay the slices of potato in the tray. Season with salt and pepper and pour over the cream. Lastly, sprinkle the cheese on top.
Bake in the oven at 200 °C for 45 minutes until the potatoes are tender and the cheese has turned crisp.

- 2 tbs olive oil
- 1 onion, thinly sliced
- 500g potatoes (or sweet potatoes), thinly sliced
- 100ml vegetable stock
- 250ml pouring cream
- sprigs of thyme and rosemary
- 80g grated cheese
- Salt + crushed pepper
