My take on the classic roti is enriched with butter and yogurt to add the softest fermented flavour. Ingredients

  • 2,5 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup plain double cream or greek-style yogurt
  • 3 tbsp olive oil
  • 3/4 cup hot water
  • 6 tbsp butter, melted

Process

If you have a stand-mixer, put all the ingredients in and with the kneading hook attached, knead on low speed until the flour has been hydrated. Turn up the speed and let the dough stretch and fold over itself until smooth & elastic (This will take a while, so make yourself a cup of tea and wait for the magic to happen).

If you don’t have a stand-mixer, kneading by hand would work just as well, just use a fork or wooden spoon to bring the ingredients together first and then cool slightly since the water is very hot and may scald your hands.

Once the dough is smooth & elastic, cover and leave to rest for 20 minutes. When the rested dough is ready, roll out rounds (or whatever shape your heart desires) & toast on a thava or dry frying pan, turning every 30 seconds and brushing with butter to keep the bread moist.
