Known for being good for your gut biome and boosting your immune system, Kimchi brings both flavour and health benefits to any meal you prepare. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This small batch recipe is forgiving, giving you alternatives to specialist ingredients used in traditional Kimchi recipes. I&#8217;ve tossed Kimchi into fried rice, on burgers and even scrambled eggs. It&#8217;s a great way to pack in flavour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Makes 1 litre bottle of Kimchi.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-8f761849 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:33.33%\">\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1 large nappa cabbage, chopped into chunks<\/li><li>1 bulb fennel, sliced thinly <strong><span class=\"has-inline-color has-luminous-vivid-orange-color\">or<\/span><\/strong> Korean radish, grated <strong><span class=\"has-inline-color has-luminous-vivid-orange-color\"><\/span><\/strong><\/li><li>1 carrot, jullienned<\/li><li>1 Asian pear <strong><span class=\"has-inline-color has-luminous-vivid-orange-color\">or<\/span><\/strong> African pear, peeled and cored ?<\/li><li>1 bulb of garlic<\/li><li>2 thumb size pieces of ginger<\/li><li>1 bunch spring onions<\/li><li>\u00bc cup Chili paste <strong><span class=\"has-inline-color has-luminous-vivid-orange-color\">or <\/span><\/strong>Gochujang <strong>?\ufe0f<\/strong><\/li><li>\u00bd cup of salt<\/li><li>\u00bc cup Korean chilli powder\/flakes<\/li><li>\u00bc cup soya sauce <span class=\"has-inline-color has-luminous-vivid-orange-color\"><strong>or<\/strong><\/span> fish sauce <strong><span class=\"has-inline-color has-luminous-vivid-orange-color\">or <\/span><\/strong>shrimp paste <span class=\"has-inline-color has-luminous-vivid-orange-color\"><strong>or<\/strong><\/span> miso paste<\/li><li>\u00bd cup apple cider vinegar<\/li><li>2 tbsp palm sugar<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Equipment<\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li>Glass mason jars with loose fitting lids<\/li><li>Large mixing bowls<\/li><li>Measuring cups &amp; spoons<\/li><li>Large spoon<\/li><\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:66.66%\">\n<h2 class=\"wp-block-heading\">Process<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Soak the napa cabbage in a litre of water with 1\/4 cup salt for 90 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once soaked, rinse thoroughly with cold water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a blender, whizz up the pear, garlic, ginger, chilli paste, chilli flakes, salt, soya sauce or fish sauce or shrimp paste or miso paste, salt and sugar.   <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You may want to put on some food-grade gloves to protect your hands for the next step.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large mixing bowl, toss in the cabbage, carrots, white onion, fennel, spring onions and season with the spicy blended paste. Gently massage the paste into the vegetables.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pack the Kimchi into a glass bottle, ensuring that the vegetables are submerged into the brine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave the bottle of Kimchi to ferment for 5-7 days on a kitchen counter.
